Fleur de Sel

French salt flower, Fleur de Sel, is considered the most precious sea salt: finest salt crystal flowers, which only emerge under optimum conditions on the surface of the salt marshes on hot, windy days. The wafer-thin layer of salt is painstakingly skimmed off with a wooden scoop and dried in the sun. The salt stays untreated and is therefore always a little damp. Gourmets refer to it as the queen of salts or caviar among the salts. Our Fleur de Sel is completely natural, free of any additives and rich in valuable minerals and trace elements. It is carefully harvested by hand in salt gardens in Greece. In addition to experience, observation and patience, the extraction of Fleur de Sel needs a very special interaction of sun, wind and water: when the morning mist, light winds and the hot sun interact, salt crystals form into fine layers on the surface of the small saltwater tanks - almost like a thin ice sheet. Fleur de Sel is carefully skimmed off by hand and laid out to dry in the sun in large baskets.
